Homemade Focaccia Dinner for the Family

This blog post is going to be simple and sweet, yet hopefully give you some inspiration on what to make for an evening dinner this week.
My family loves bread; call kinds of bread. It works out because I also enjoy baking bread. It's therapeutic and grounding. What do you mean I get to slowly tend to the dough all day for the sweet reward of putting it in the oven, the house to fill with the savory aroma of baking dough and getting to cut into a warm loaf to serve with melted butter for dinner? Everything.
There's one type of bread that has intimidated me for years: focaccia. I LOVE IT, but it seemed just too hard to make. The thought of the process alone felt too difficult to engage with. Then I found a recipe that made it simple, easy... it doesn't require an overnight proof (although I'm sure this would make it even better) - but rather just a day full of simple stretch and folds and a whole lotta olive oil.... just the way we like it.
This recipe is no-knead, simple and allows for bubble, thick and crispy focaccia. It was all that I hoped for and then some!
Both my girls (1.5 and 4.5 yo) loved this, my husband and I devoured it. I topped this focaccia with olives, garlic and rosemary. Chefs kiss.
We created a buffet of toppings and each added our own flare to our slice of focaccia:
homemade pickled red onion
slow roasted (warm) tomatoes
prosciutto
salami
burrata
fresh basil
I paired it with a chamomile and turmeric iced tea (for digestion - do you want a recipe?), and we had a delightful and easy dinner together.
