These long summer days are exactly what we survived the dark, cold winter for. And also... the heat is sometimes oppressive. For some reason, my go-to afternoon pick-me-up for the kids and I has become popcorn made in the air-popper and electrolyte lemonade. Trust me- this easy recipe for an organic electrolyte mocktail with fresh popcorn is the perfect combo of munchy and refreshing.

Old Fashioned Popcorn

Full disclosure- the air popper I'm linking is not the one we have. It's the one I wish we had!! We got ours for our wedding almost 13 years ago and it's still going strong. These babies last a long time and are definitely one of those niche appliances that are worth having. Life feels sort of adorable and slow when you're watching heaps of popcorn tumble into the Big Bowl, ready for butter and salt.

Electrolyte Lemonade

This easy recipe for an organic electrolyte mocktail is ever-evolving, but I'm really enjoying where it's landed these days. I love keeping a fresh mint plant on hand, and fresh-squeezed lemons are always the vibe.

Throw these ingredients in a mason jar, shake it up with some ice, and sip sip on the patio all afternoon long!

  1. 1 scoop Re-Lyte Hydration Electrolyte Powder Mix: This will last you a long time... just a little scoop goes a long way!

  2. A pinch Himalayan Chef Pink Himalayan Salt: Millions of uses around the home and kitchen, and.... It's so pretty. Just add a pinch!

  3. 1/2 tsp Manukora Raw Manuka Honey: This stuff is GOLD. We have endless uses for manuka honey in our home, ranging from sick season to rashes to bedtime treats. This makes a great addition to your hydration cocktail because not only does it have amazing Immune system benefits (antibacterial + anti-inflammatory properties), but It helps the gut with water absorption, giving you a super efficient boost.

  4. 2-6 leaves Fresh Mint: the best thing to do is hit up your local farmers market or the herb section at the plant nursery for a plant to keep at home. If you can't though, amazon doessss deliver live plants :)

  5. Juice from 1/2-1 Fresh Lemon: I'll be honest, I want fresh lemon on or in basically everything. Nothing tastes fresher!

  6. These Stainless Steel Kids Tumbler Cups are my go-to. And for some reason, my kids are pumped about whatever I put inside! Win-win!

Mix it up nice and long to make sure everything dissolves, add a lemon wedge and sprig of mint, pour into your cute little tumbler, and enjoy! I'll be honest, I feel like an all-star mom when my kids are slurping down their super yummy, super healthy hydration boost.
